Something that is gaining popularity in Houston, and I imagine in many other places are Fish Tacos. I decided to make my own at home, and they came out pretty good.
Ingredients:
Fish fillets (as much as you plan to feed everyone)
Corn tortillas (soft)
Red cabbage (shredded)
Mangos (cut julienne style)
Tomatoes (chopped)
Guacamole
Fish Taco Sauce as follows:
- Chipotle sauce (I used a Honey Chipotle sauce)
- Chunky Style Picante sauce (mild)
- Miracle Whip
Preparation:
Season your fish and cook them your favorite way. I baked mine with Cajun seasoning on it. Fish Taco Sauce: I used about a cup of the Honey Chipotle sauce, ½ cup of the Picante sauce and a heaping teaspoon of the Miracle Whip. Then I mixed them well. Taste the sauce to see if you like it, and adjust if necessary. Shred your red cabbage, cut up your mangos into thin strips, and chop your tomatoes. Mix up your guacamole last. It might be a good idea to slightly warm your corn tortillas as they are a little brittle.
Take 2 corn tortillas together. Put a little red cabbage on first, then cut some pieces of fish in narrow shapes and put them on. Put on the Fish Taco Sauce and some guacamole and then the mangos and copped tomatoes. Roll’em up and dig in.
